- 2 smoked beef tongues (about 2 pounds total)
- 1 large onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, smashed
- 1 bay leaf
- 1 teaspoon black peppercorns
- 8 cups water
- Salt to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, combine the smoked beef tongues, onion, carrots, celery, garlic, bay leaf, and black peppercorns.
- Pour in the water and bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low and cover the pot. Simmer for about 2 to 3 hours, or until the tongues are tender.
- Carefully remove the tongues from the pot and let them cool slightly. Once cool enough to handle, peel off the skin and slice the tongues into thin pieces.
- Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids.
- Return the broth to the stove and season with salt to taste. Heat the broth until warmed through.
- Serve the sliced tongue in bowls and ladle the hot broth over the top. Garnish with fresh parsley.
Notes
- For a richer flavor, add a splash of soy sauce or Worcestershire sauce to the broth.
- You can also incorporate other vegetables like mushrooms or leeks for added depth.
