  • 1 large onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 8 cups water
  • Salt to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, combine the smoked beef tongues, onion, carrots, celery, garlic, bay leaf, and black peppercorns.
  2. Pour in the water and bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and cover the pot. Simmer for about 2 to 3 hours, or until the tongues are tender.
  4. Carefully remove the tongues from the pot and let them cool slightly. Once cool enough to handle, peel off the skin and slice the tongues into thin pieces.
  5. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids.
  6. Return the broth to the stove and season with salt to taste. Heat the broth until warmed through.
  7. Serve the sliced tongue in bowls and ladle the hot broth over the top. Garnish with fresh parsley.
