Ingredients

  • 2 pounds beef short ribs
  • 8 cups beef broth
  • 1 medium onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 1 tablespoon Worcestershire sauce
  • Salt to taste
  • Fresh herbs (such as thyme or parsley) for garnish

Instructions

  1. Preheat your smoker to 225°F. Season the beef short ribs with salt and pepper. Smoke the ribs for about 4 hours or until they are tender and have a nice smoky flavor. Remove from the smoker and let cool slightly.
  2. In a large pot, combine the smoked ribs, beef broth, onion, carrots, celery, garlic, bay leaf, black peppercorns, and Worcestershire sauce. Bring to a boil over medium-high heat.
  3. Reduce the heat to low and let simmer for about 2 hours, allowing the flavors to meld.
  4. After simmering, remove the ribs and strain the broth through a fine mesh sieve to remove the solids. Discard the solids and return the clear broth to the pot.
  5. Taste the consommé and adjust seasoning with salt if necessary.
  6. Serve hot, garnished with fresh herbs.

Notes

  • For a richer flavor, add a splash of red wine to the broth while it simmers.
  • If you prefer a clearer consommé, you can clarify it by whisking in an egg white and simmering gently until the egg white coagulates, then strain again.
