- 2 pounds beef short ribs
- 8 cups beef broth
- 1 medium onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, smashed
- 1 bay leaf
- 1 teaspoon black peppercorns
- 1 tablespoon Worcestershire sauce
- Salt to taste
- Fresh herbs (such as thyme or parsley) for garnish
Instructions
- Preheat your smoker to 225°F. Season the beef short ribs with salt and pepper. Smoke the ribs for about 4 hours or until they are tender and have a nice smoky flavor. Remove from the smoker and let cool slightly.
- In a large pot, combine the smoked ribs, beef broth, onion, carrots, celery, garlic, bay leaf, black peppercorns, and Worcestershire sauce. Bring to a boil over medium-high heat.
- Reduce the heat to low and let simmer for about 2 hours, allowing the flavors to meld.
- After simmering, remove the ribs and strain the broth through a fine mesh sieve to remove the solids. Discard the solids and return the clear broth to the pot.
- Taste the consommé and adjust seasoning with salt if necessary.
- Serve hot, garnished with fresh herbs.
Notes
- For a richer flavor, add a splash of red wine to the broth while it simmers.
- If you prefer a clearer consommé, you can clarify it by whisking in an egg white and simmering gently until the egg white coagulates, then strain again.
