- 4 large bell peppers
- 2 cups smoked brisket, shredded
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your smoker to 225°F (107°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix the shredded brisket, cheese, onions, cilantro, olive oil, garlic powder, smoked paprika, salt, and pepper.
- Stuff each bell pepper with the brisket mixture.
- Place the stuffed peppers in the smoker and cook for about 1 hour, or until the peppers are tender.
- Remove from the smoker and let cool for a few minutes before serving.
Notes
- Feel free to use different types of cheese for added flavor.
- These can be made ahead of time and reheated before serving.
- Adjust the spice level by adding jalapeños or hot sauce to the filling.
