Ingredients

  • 4 large bell peppers
  • 2 cups smoked brisket, shredded
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the shredded brisket, cheese, onions, cilantro, olive oil, garlic powder, smoked paprika, salt, and pepper.
  4. Stuff each bell pepper with the brisket mixture.
  5. Place the stuffed peppers in the smoker and cook for about 1 hour, or until the peppers are tender.
  6. Remove from the smoker and let cool for a few minutes before serving.
