Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, melt the smoked duck fat and mix it with the sugar until well combined.
- Add the eggs and vanilla extract to the duck fat mixture and stir until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean.
