Ingredients

  • 1 whole smoked duck (about 4 pounds)
  • 8 cups water
  • 2 medium onions, quartered
  • 3 cloves garlic, smashed
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt to taste
  • Fresh herbs (such as thyme or parsley) for garnish

Instructions

  1. In a large stockpot, place the whole smoked duck and add 8 cups of water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and skim off any foam that rises to the surface.
  3. Add the quartered onions, smashed garlic, chopped carrots, chopped celery, bay leaf, black peppercorns, soy sauce, and apple cider vinegar to the pot.
  4. Cover and let the broth simmer for about 2 to 3 hours, allowing the flavors to meld and the duck to become tender.
  5. After simmering, remove the duck from the pot and let it cool slightly. Strain the broth through a fine-mesh sieve into another pot, discarding the solids.
  6. Once the duck is cool enough to handle, remove the meat from the bones and shred it into bite-sized pieces. Return the shredded duck meat to the strained broth.
  7. Taste the broth and add salt as needed. Heat the broth gently before serving.
  8. Ladle the broth into bowls and garnish with fresh herbs.

Notes

  • For a richer flavor, add a few sprigs of fresh thyme or rosemary during the simmering process.
  • If you prefer a spicier broth, consider adding a few slices of fresh ginger or a dash of hot sauce while simmering.
