- 1 whole smoked duck (about 4 pounds)
- 8 cups water
- 2 medium onions, quartered
- 3 cloves garlic, smashed
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 bay leaf
- 1 teaspoon black peppercorns
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- Salt to taste
- Fresh herbs (such as thyme or parsley) for garnish
Instructions
- In a large stockpot, place the whole smoked duck and add 8 cups of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and skim off any foam that rises to the surface.
- Add the quartered onions, smashed garlic, chopped carrots, chopped celery, bay leaf, black peppercorns, soy sauce, and apple cider vinegar to the pot.
- Cover and let the broth simmer for about 2 to 3 hours, allowing the flavors to meld and the duck to become tender.
- After simmering, remove the duck from the pot and let it cool slightly. Strain the broth through a fine-mesh sieve into another pot, discarding the solids.
- Once the duck is cool enough to handle, remove the meat from the bones and shred it into bite-sized pieces. Return the shredded duck meat to the strained broth.
- Taste the broth and add salt as needed. Heat the broth gently before serving.
- Ladle the broth into bowls and garnish with fresh herbs.
Notes
- For a richer flavor, add a few sprigs of fresh thyme or rosemary during the simmering process.
- If you prefer a spicier broth, consider adding a few slices of fresh ginger or a dash of hot sauce while simmering.
