Ingredients

  • 2 pounds beef short ribs
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup buffalo sauce
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your smoker to 225°F. If using a charcoal smoker, ensure you have enough wood chips (hickory or applewood work well) for flavor.
  2. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.
  3. Rub the olive oil all over the short ribs, then generously apply the spice mixture to coat the meat evenly.
  4. Place the short ribs in the smoker and smoke for 4-5 hours, or until the internal temperature reaches 195°F for tender meat.
  5. While the ribs are smoking, combine the buffalo sauce, honey, and apple cider vinegar in a saucepan over medium heat. Stir until well mixed and heated through, then remove from heat.
  6. When the ribs are done smoking, remove them from the smoker and brush generously with the buffalo sauce mixture.
  7. Wrap the ribs in aluminum foil and return them to the smoker for an additional 30 minutes to allow the sauce to set.
  8. Remove the ribs from the foil, brush with more buffalo sauce, and let them rest for 10 minutes before serving.

Notes

  • For a spicier kick, increase the cayenne pepper or add some chopped jalapeños to the buffalo sauce.
  • If you prefer a sweeter flavor, substitute brown sugar for honey in the sauce.
