Ingredients

  • 3 pounds bison bones (preferably with some meat attached)
  • 1 large onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 10 cups water
  • Salt to taste

Instructions

  1. Preheat your smoker to 225°F. If you don’t have a smoker, you can roast the bones in the oven at 400°F for 30 minutes.
  2. Place the bison bones in the smoker and smoke for about 2 hours, turning occasionally, until they are nicely browned and infused with smoke flavor.
  3. In a large stockpot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for about 5 minutes until they begin to soften.
  4. Add the smoked bison bones to the pot along with the garlic, apple cider vinegar, black peppercorns, bay leaves, thyme, and water.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for at least 12 hours (up to 24 hours for a richer flavor), adding water as necessary to keep the bones submerged.
  6. After simmering, strain the broth through a fine-mesh sieve into another pot or large bowl, discarding the solids. Season with salt to taste.
  7. Let the broth cool, then store it in the refrigerator for up to 5 days or freeze for longer storage.
