Description

A delicious low-carb version of the classic kebab using smashed tortillas.


Ingredients

  • 1 pound ground beef or turkey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 4 low-carb tortillas (such as almond flour or coconut flour tortillas)
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup salsa

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a large bowl, combine the ground beef or turkey, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Mix until well combined.
  3. Shape the meat mixture into 4 equal patties.
  4. Grill the patties for about 5-7 minutes on each side, or until cooked through and nicely charred.
  5. During the last minute of cooking, sprinkle shredded cheddar cheese on top of each patty to melt.
  6. While the patties are cooking, heat the low-carb tortillas on a separate skillet for about 30 seconds on each side until warm and pliable.
  7. To assemble, place a grilled patty on each tortilla.
  8. Top with shredded lettuce, diced tomato, a dollop of sour cream or Greek yogurt, and a spoonful of salsa.
  9. Carefully smash the tortilla around the filling to create a kebab-like wrap.
  10. Serve immediately.

Notes

  • For a spicier kick, add sliced jalapeños or a dash of hot sauce to the toppings.
  • You can also substitute the ground meat with shredded rotisserie chicken for a quicker option.
