- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1 cup diced cucumber
- 1/2 cup red onion, finely chopped
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh lemon juice
- 4 pita breads
- 1 cup shredded lettuce
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a skillet over medium heat, add a drizzle of olive oil and brown the ground beef or turkey until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the taco seasoning and follow package instructions, usually adding water and simmering for about 5 minutes. Season with salt and pepper to taste.
- While the meat is cooking, prepare the tzatziki sauce by mixing the Greek yogurt, diced cucumber, red onion, lemon juice, and a pinch of salt in a bowl. Set aside.
- Warm the pita breads in a dry skillet or microwave for about 30 seconds until soft.
- To assemble, spread a generous amount of the tzatziki sauce on each pita.
- Top with the seasoned meat, diced tomatoes, shredded lettuce, and cheese.
- Fold the pita in half and gently smash it down to create a ‘smashed’ effect.
- Serve immediately while warm.
Notes
- For extra flavor, try adding sliced jalapeños or avocado to the filling.
- You can also swap the ground meat for grilled chicken or a plant-based alternative for a different twist.
