Ingredients

  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  2. Add the diced onion, bell pepper, and garlic to the skillet, cooking until the vegetables are softened, about 5 minutes.
  3. Transfer the beef and vegetable mixture to a slow cooker.
  4. Stir in the diced tomatoes, cauliflower rice, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine all ingredients.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the cauliflower is tender and the flavors meld together.
  6. About 15 minutes before serving, sprinkle the shredded cheddar cheese on top of the casserole. Cover and let it melt.
  7. Once done, garnish with fresh parsley before serving.
