Ingredients

- 1 pound ground beef
- 1 medium onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup cauliflower rice
- 1 cup shredded cheddar cheese
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
- Add the diced onion, bell pepper, and garlic to the skillet, cooking until the vegetables are softened, about 5 minutes.
- Transfer the beef and vegetable mixture to a slow cooker.
- Stir in the diced tomatoes, cauliflower rice, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine all ingredients.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours until the cauliflower is tender and the flavors meld together.
- About 15 minutes before serving, sprinkle the shredded cheddar cheese on top of the casserole. Cover and let it melt.
- Once done, garnish with fresh parsley before serving.

- For added heat, include diced jalapeños or a pinch of cayenne pepper in the beef mixture.
- Substitute ground turkey or chicken for a leaner option, keeping the same cooking times.
