  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell pepper, diced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup green onions, sliced (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Drain any excess fat.
  3. Transfer the beef mixture to the slow cooker. Add the drained diced tomatoes, cauliflower rice, chili powder, cumin, smoked paprika, salt, and pepper. Stir until well combined.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  5. About 15 minutes before serving, sprinkle the shredded cheddar cheese on top of the casserole. Cover and allow the cheese to melt.
  6. Serve hot, garnished with sliced green onions. This dish pairs well with pork rinds, celery sticks, or cucumber slices for a crunchy side.
