- 1 medium onion, diced

- 1 cup bell pepper, diced

- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup green onions, sliced (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Drain any excess fat.
- Transfer the beef mixture to the slow cooker. Add the drained diced tomatoes, cauliflower rice, chili powder, cumin, smoked paprika, salt, and pepper. Stir until well combined.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours.
- About 15 minutes before serving, sprinkle the shredded cheddar cheese on top of the casserole. Cover and allow the cheese to melt.
- Serve hot, garnished with sliced green onions. This dish pairs well with pork rinds, celery sticks, or cucumber slices for a crunchy side.
