Instructions
- Sift the flour and salt into a spacious bowl and create a well in the center.
- Crack in the egg and add the lukewarm water, stirring until the mixture comes together.
- Transfer the dough to a floured surface and knead for about 5 minutes until elastic and smooth.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- In a separate bowl, blend the ricotta cheese, yogurt, green onions, black pepper, and onion powder for the filling.
- Roll out the rested dough into a thin rectangle, approximately 1/8 inch thick, and cut into four equal squares.
- Distribute the cheese filling evenly over each square, leaving a small border around the edges.
- Roll each square from one corner to the opposite corner to form a tight cylinder and pinch the seams to secure the filling.
- Bring a large pot of salted water to a rolling boil and carefully add the rolled dumplings.
- Cook for about 10-12 minutes, or until the dumplings rise to the top and are tender.
- In a frying pan, heat the olive oil over medium heat and sauté the panko breadcrumbs until golden brown.
- Remove the cooked dumplings from the water, drain briefly, and cut into bite-sized pieces.
- Toss the dumpling pieces in the toasted panko and serve immediately, garnished with extra green onions or a dollop of yogurt if desired.
