  • 3/4 cup lukewarm water
  • 1 cup ricotta cheese
  • 1/2 cup plain yogurt

  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1/4 cup panko breadcrumbs

Instructions

  1. Sift the flour and salt into a spacious bowl and create a well in the center.
  2. Crack in the egg and add the lukewarm water, stirring until the mixture comes together.
  3. Transfer the dough to a floured surface and knead for about 5 minutes until elastic and smooth.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. In a separate bowl, blend the ricotta cheese, yogurt, green onions, black pepper, and onion powder for the filling.
  6. Roll out the rested dough into a thin rectangle, approximately 1/8 inch thick, and cut into four equal squares.
  7. Distribute the cheese filling evenly over each square, leaving a small border around the edges.
  8. Roll each square from one corner to the opposite corner to form a tight cylinder and pinch the seams to secure the filling.
  9. Bring a large pot of salted water to a rolling boil and carefully add the rolled dumplings.
  10. Cook for about 10-12 minutes, or until the dumplings rise to the top and are tender.
  11. In a frying pan, heat the olive oil over medium heat and sauté the panko breadcrumbs until golden brown.
  12. Remove the cooked dumplings from the water, drain briefly, and cut into bite-sized pieces.
  13. Toss the dumpling pieces in the toasted panko and serve immediately, garnished with extra green onions or a dollop of yogurt if desired.
