Ingredients

  • 2 pounds veal stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 cup potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the veal cubes and brown them on all sides, about 5-7 minutes. Remove the veal and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion is translucent.
  3. Return the browned veal to the pot. Pour in the beef broth and add the carrots, celery, potatoes, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the veal is tender.
  5. If you prefer a thicker stew, mix the cornstarch with water to create a slurry. Stir it into the stew during the last 10 minutes of cooking and let it simmer until thickened.
  6. Remove the bay leaf before serving. Adjust seasoning with additional salt and pepper if needed.
