- 2 pounds veal stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 cup potatoes, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the veal cubes and brown them on all sides, about 5-7 minutes. Remove the veal and set aside.
- In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion is translucent.
- Return the browned veal to the pot. Pour in the beef broth and add the carrots, celery, potatoes, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the veal is tender.
- If you prefer a thicker stew, mix the cornstarch with water to create a slurry. Stir it into the stew during the last 10 minutes of cooking and let it simmer until thickened.
- Remove the bay leaf before serving. Adjust seasoning with additional salt and pepper if needed.
Notes
- For added flavor, consider adding a splash of red wine during the simmering process.
- You can substitute the veal with lean beef or turkey for a different flavor profile while keeping it healthy.
