A creamy and delicious sweet potato mousse that is easy to make and perfect for dessert.
Ingredients

- 2 medium sweet potatoes (about 1 pound), peeled and cubed
- 1/2 cup heavy cream
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 tablespoon unsweetened cocoa powder (optional, for chocolate flavor)
Instructions
- In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- In a blender or food processor, combine the cooked sweet potatoes, heavy cream, maple syrup, vanilla extract, cinnamon, nutmeg, salt, and cocoa powder (if using). Blend until smooth and creamy.
- Taste and adjust sweetness or spices as desired.
- Spoon the mousse into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours to chill and set.
- Serve chilled, garnished with a dollop of whipped cream or a sprinkle of cinnamon if desired.
Notes
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
- Add a pinch of cayenne pepper for a spicy kick or mix in some chopped nuts for added texture.
