Ingredients

- 1 pound deli corned beef, sliced thin
- 8 ounces Swiss cheese, sliced
- 1 cup sauerkraut, drained and squeezed dry
- 1/2 cup Thousand Island dressing
- 1 package (1 pound) rye bread, cut into 1-inch squares
- 1/4 cup unsalted butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix the melted butter, garlic powder, and onion powder. Brush this mixture onto one side of each rye bread square.
- On the unbuttered side of half the rye squares, layer a slice of Swiss cheese, a small amount of corned beef, a spoonful of sauerkraut, and a drizzle of Thousand Island dressing.
- Top each assembled bite with another rye square, buttered side up.
- Place the mini Reuben bites on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 12-15 minutes, or until the bread is golden brown and the cheese is melted.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.

- For a healthier option, use whole grain or gluten-free bread.
- Add a slice of pickle inside each bite for an extra tangy flavor.
