Description

Sicilian Rice Balls are a delicious and savory treat, perfect for any occasion.


Ingredients

  • 1 pound deli corned beef, sliced thin
  • 8 ounces Swiss cheese, sliced
  • 1 cup sauerkraut, drained and squeezed dry
  • 1/2 cup Thousand Island dressing
  • 1 package (1 pound) rye bread, cut into 1-inch squares
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the melted butter, garlic powder, and onion powder. Brush this mixture onto one side of each rye bread square.
  3. On the unbuttered side of half the rye squares, layer a slice of Swiss cheese, a small amount of corned beef, a spoonful of sauerkraut, and a drizzle of Thousand Island dressing.
  4. Top each assembled bite with another rye square, buttered side up.
  5. Place the mini Reuben bites on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 12-15 minutes, or until the bread is golden brown and the cheese is melted.
  7. Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
