  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sichuan peppercorns, crushed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a medium bowl, combine the mango puree, honey, soy sauce, rice vinegar, crushed Sichuan peppercorns, garlic powder, salt, and black pepper. Mix well to create the marinade.
  2. Add the shrimp to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated shrimp onto the soaked bamboo skewers, about 4-5 shrimp per skewer.
  5. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
  6. Remove from the grill and let rest for a minute before serving.
  7. Serve the skewers with extra mango puree or a sprinkle of fresh cilantro for garnish.
