Description

A refreshing and flavorful dish featuring cold noodles tossed in a creamy sesame-tahini sauce, inspired by Sichuan cuisine.


Ingredients

  • 8 ounces dried noodles (such as soba or rice noodles)
  • 1/4 cup tahini
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon chili oil (adjust to taste)
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1/4 cup water (more if needed)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crushed peanuts (optional)
  • Salt to taste

Instructions

  1. Cook the noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
  2. In a mixing bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, chili oil, honey or maple syrup, minced garlic, and water until smooth. Adjust the consistency with more water if needed.
  3. In a large bowl, combine the cooled noodles with the sesame-tahini sauce. Toss until the noodles are evenly coated.
  4. Add chopped green onions, cilantro, and crushed peanuts (if using) to the noodles. Toss gently to combine.
  5. Taste and adjust seasoning with salt or additional chili oil if desired.
  6. Serve immediately or refrigerate for 30 minutes to allow flavors to meld. Enjoy cold.

Notes

  • For added protein, consider adding cooked shredded chicken or tofu.
  • For a crunchier texture, include sliced cucumbers or shredded carrots in the noodle mix.
