Description

This Shrimp Scampi Gnocchi is a delicious fusion of tender gnocchi and succulent shrimp in a buttery, garlicky sauce with a hint of lemon. Perfect for a quick weeknight meal or a special occasion!


Ingredients

  • 1 lb gnocchi
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup white wine or chicken broth
  • Juice of 1 lemon
  • 4 tablespoons butter, divided
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Red pepper flakes (optional)

Instructions

  • Cook gnocchi in salted water until they float to the top, then drain.
  • Heat olive oil and 2 tablespoons of butter in a skillet. Cook shrimp for 2-3 minutes per side, then remove.
  • Sauté garlic, then add wine or broth and lemon juice, reducing the sauce slightly.
  • Return shrimp and gnocchi to the skillet, tossing in the sauce. Stir in remaining butter.
  • Garnish with fresh parsley and serve immediately.

Notes

  • Add red pepper flakes for a spicy kick.
  • Substitute white wine with chicken broth if preferred.
