  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 head of butter or romaine lettuce, leaves separated
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Season the beef chuck roast with chili powder, cumin, smoked paprika, salt, and black pepper. Add the seasoned roast to the skillet, searing each side for about 3-4 minutes until browned.
  3. Pour in the beef broth and Worcestershire sauce, then cover the skillet and reduce the heat to low. Simmer for 3-4 hours, or until the beef is tender and easily shredded with a fork.
  4. Once cooked, remove the beef from the skillet and shred it using two forks. Return the shredded beef to the skillet and mix it with the cooking liquid.
  5. To assemble the tacos, take a lettuce leaf and fill it with a generous portion of shredded beef. Top with diced tomatoes, avocado, shredded cheese, and fresh cilantro.
  6. Serve with lime wedges on the side for squeezing over the tacos.
