A healthy and easy sheet pan dinner featuring balsamic chicken with vegetables.

- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 cup cherry tomatoes, halved
- 1 medium red onion, sliced
- 1 cup green beans, trimmed
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
- In a small bowl, whisk together the balsamic vinegar, olive oil, garlic powder, oregano, basil, salt, and pepper.
- Place the chicken breasts on the prepared sheet pan. Pour half of the balsamic mixture over the chicken, ensuring they are well coated.
- Arrange the cherry tomatoes, red onion, and green beans around the chicken on the sheet pan. Drizzle the remaining balsamic mixture over the vegetables.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the vegetables are tender.
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh basil leaves if desired before serving.
Notes
- For added flavor, marinate the chicken in the balsamic mixture for 30 minutes to 2 hours before cooking.
- Feel free to substitute the green beans with broccoli or asparagus for a different vegetable option.
