Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, sliced
  • 1 cup green beans, trimmed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, garlic powder, oregano, basil, salt, and pepper.
  3. Place the chicken breasts on the prepared sheet pan. Pour half of the balsamic mixture over the chicken, ensuring they are well coated.
  4. Arrange the cherry tomatoes, red onion, and green beans around the chicken on the sheet pan. Drizzle the remaining balsamic mixture over the vegetables.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the vegetables are tender.
  6. Remove from the oven and let it rest for 5 minutes. Garnish with fresh basil leaves if desired before serving.

Notes

  • For added flavor, marinate the chicken in the balsamic mixture for 30 minutes to 2 hours before cooking.
  • Feel free to substitute the green beans with broccoli or asparagus for a different vegetable option.
