Shawarma-Inspired Spiced Lamb and Hummus Bowls are delicious!


Ingredients

  • 1 pound ground lamb
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 cup hummus (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • Pita bread, for serving (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the ground lamb and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
  2. Stir in the cumin, coriander, smoked paprika, cinnamon, cayenne pepper, salt, and black pepper. Cook for an additional 2-3 minutes until the spices are fragrant. Remove from heat.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and lemon juice. Toss to combine.
  4. To assemble the bowls, divide the quinoa salad mixture among four bowls. Top each with a generous scoop of spiced lamb and a dollop of hummus.
  5. Serve with pita bread on the side, if desired.

Notes

  • For a vegetarian option, substitute the ground lamb with sautéed mushrooms or lentils seasoned with the same spices.
  • Add a dollop of tzatziki sauce for a refreshing twist and extra creaminess.
