Shawarma-Inspired Spiced Lamb and Hummus Bowls are delicious!
Ingredients

- 1 pound ground lamb
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked quinoa
- 1 cup hummus (store-bought or homemade)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- Pita bread, for serving (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the ground lamb and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
- Stir in the cumin, coriander, smoked paprika, cinnamon, cayenne pepper, salt, and black pepper. Cook for an additional 2-3 minutes until the spices are fragrant. Remove from heat.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and lemon juice. Toss to combine.
- To assemble the bowls, divide the quinoa salad mixture among four bowls. Top each with a generous scoop of spiced lamb and a dollop of hummus.
- Serve with pita bread on the side, if desired.
Notes
- For a vegetarian option, substitute the ground lamb with sautéed mushrooms or lentils seasoned with the same spices.
- Add a dollop of tzatziki sauce for a refreshing twist and extra creaminess.
