Description

Shakshuka Stuffed Peppers are a delicious and healthy twist on a classic dish, featuring bell peppers filled with a savory tomato mixture and topped with eggs and feta cheese.


Ingredients

  • 2 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1/4 cup crumbled feta cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.
  4. Stir in the minced garlic, cumin, and smoked paprika, cooking for an additional minute until fragrant.
  5. Add the diced tomatoes, salt, and black pepper to the skillet. Simmer for about 10 minutes, allowing the mixture to thicken slightly.
  6. Remove the skillet from heat and carefully crack one egg into each pepper, then spoon the tomato mixture around the eggs, filling the peppers.
  7. Sprinkle the crumbled feta cheese on top of the mixture.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the eggs are set to your liking.
  10. Garnish with fresh parsley before serving.

  • For a spicier version, add a pinch of red pepper flakes or diced jalapeños to the tomato mixture.
  • You can substitute the feta cheese with shredded mozzarella or goat cheese for a different flavor profile.
