Shakshuka Stuffed Peppers are a delicious and healthy twist on a classic dish, featuring bell peppers filled with a savory tomato mixture and topped with eggs and feta cheese.

- 2 large bell peppers (any color)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 can (14.5 ounces) diced tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large eggs
- 1/4 cup crumbled feta cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.
- Stir in the minced garlic, cumin, and smoked paprika, cooking for an additional minute until fragrant.
- Add the diced tomatoes, salt, and black pepper to the skillet. Simmer for about 10 minutes, allowing the mixture to thicken slightly.
- Remove the skillet from heat and carefully crack one egg into each pepper, then spoon the tomato mixture around the eggs, filling the peppers.
- Sprinkle the crumbled feta cheese on top of the mixture.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the eggs are set to your liking.
- Garnish with fresh parsley before serving.
Notes
- For a spicier version, add a pinch of red pepper flakes or diced jalapeños to the tomato mixture.
- You can substitute the feta cheese with shredded mozzarella or goat cheese for a different flavor profile.
