- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 clove garlic, minced
- 1/4 cup water (adjust for desired consistency)
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- Cook the soba noodles according to package instructions. Drain and rinse under cold water.
- In a bowl, whisk together peanut butter, soy sauce, sesame oil, honey, rice vinegar, garlic, and water until smooth.
- Toss the cooked soba noodles with the peanut sauce until well coated.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- For a spicier version, add red pepper flakes to the sauce.
- This dish can be served warm or cold.
