- 4 cups water
- 1 pound firm white fish fillets (like tilapia or cod)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium tomato, diced
- 1 bell pepper, chopped (any color)
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1/4 cup fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Rinse the rice thoroughly under cold water until the water runs clear.
- In a saucepan, bring 4 cups of water to a rolling boil.
- Add the rice along with a pinch of salt, then lower the heat to a gentle simmer.
- Cover and let it cook for about 18-20 minutes, or until the rice is fluffy and the water has evaporated.
- Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
- While the rice is cooking, heat the vegetable oil in a large skillet over medium heat.
- Add the finely chopped onion and sauté for approximately 5 minutes until it becomes translucent and soft.
- Incorporate the minced garlic, diced tomato, and chopped bell pepper into the skillet.
- Stir and cook for another 3-4 minutes until the vegetables are tender and fragrant.
- Sprinkle in the ground coriander, cumin, paprika, cayenne pepper, along with salt and pepper.
- Mix everything together and allow it to cook for 1-2 minutes to enhance the flavors.
- Gently lay the fish fillets in the skillet, ensuring they are covered with the vegetable mixture.
- Cover the skillet and let it cook for about 5-7 minutes, or until the fish is opaque and easily flakes apart with a fork.
- To serve, place a generous portion of rice on each plate, top it with the flavorful fish and vegetable medley, and finish with a sprinkle of fresh parsley.
- Add lemon wedges on the side for an extra zesty kick.
