- 2 pounds (900 g) sweet potatoes, peeled and thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk or heavy cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground nutmeg (optional)
- 1 cup shredded Gruyère, cheddar, or mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional, for topping)
- 1 tablespoon fresh thyme or parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a roux. Gradually whisk in the milk, garlic powder, salt, pepper, and nutmeg (if using). Cook, stirring, until the sauce thickens, about 3-4 minutes. Remove from heat and stir in 3/4 cup of the shredded cheese until melted and smooth.
- Arrange half of the sweet potato slices in an overlapping layer in the prepared baking dish. Pour half of the creamy sauce over the sweet potatoes, spreading it evenly. Add the remaining sweet potato slices in a second layer and pour the remaining sauce over the top.
- Sprinkle the remaining shredded cheese and Parmesan (if using) evenly over the top.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the sweet potatoes are tender and the top is golden and bubbly.
- Let the scalloped sweet potatoes cool for 5-10 minutes before serving. Garnish with fresh thyme or parsley if desired.
