Ingredients

- 1 cup rolled oats
- 4 cups water or vegetable broth
- 1 teaspoon salt
- 1 tablespoon za’atar spice blend
- 1 tablespoon olive oil
- 2 soft-boiled eggs (cooked to your preference)
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a medium saucepan, bring the water or vegetable broth to a boil.
- Stir in the rolled oats and salt, then reduce the heat to medium-low.
- Cook the oats, stirring occasionally, for about 5-7 minutes until they reach a creamy consistency.
- Remove the saucepan from heat and stir in the za’atar spice blend and olive oil.
- While the oats are cooking, prepare the soft-boiled eggs. Bring a small pot of water to a boil, gently add the eggs, and boil for 6-7 minutes. Transfer the eggs to an ice bath for a few minutes, then peel.
- Serve the za’atar oat porridge in bowls, topped with the soft-boiled eggs, and garnish with fresh parsley. Serve with lemon wedges on the side for an extra burst of flavor.
Notes
- For added creaminess, stir in a splash of milk or a dollop of yogurt before serving.
- Customize the toppings by adding sautéed vegetables, crumbled feta cheese, or a drizzle of hot sauce for extra flavor.
