Ingredients

  • 4 cups water or vegetable broth
  • 1 teaspoon salt
  • 1 tablespoon za’atar spice blend
  • 1 tablespoon olive oil
  • 2 soft-boiled eggs (cooked to your preference)
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a medium saucepan, bring the water or vegetable broth to a boil.
  2. Stir in the rolled oats and salt, then reduce the heat to medium-low.
  3. Cook the oats, stirring occasionally, for about 5-7 minutes until they reach a creamy consistency.
  4. Remove the saucepan from heat and stir in the za’atar spice blend and olive oil.
  5. While the oats are cooking, prepare the soft-boiled eggs. Bring a small pot of water to a boil, gently add the eggs, and boil for 6-7 minutes. Transfer the eggs to an ice bath for a few minutes, then peel.
  6. Serve the za’atar oat porridge in bowls, topped with the soft-boiled eggs, and garnish with fresh parsley. Serve with lemon wedges on the side for an extra burst of flavor.
