Delight in every bite with these savory za’atar-feta pita chips paired with herb-pickled zucchini.
Ingredients

- 4 pita breads
- 3 tbsp olive oil
- 2 tbsp za’atar spice mix
- ½ tsp sea salt
- ½ cup crumbled feta cheese
- 1 medium zucchini, thinly sliced
- ½ cup white vinegar
- ½ cup water
- 1 tbsp sugar
- 1 tsp salt
- 1 garlic clove, smashed
- 1 tsp mustard seeds
- A few sprigs of fresh dill or parsley
- Optional: chili flakes for heat
Instructions
- Make the pickles (ahead of time!): In a small saucepan, bring vinegar, water, sugar, salt, garlic, and mustard seeds to a light boil. Place zucchini slices and herbs in a jar. Pour the hot brine over. Let cool to room temp, then refrigerate at least 1 hour (better overnight!).
- Prepare pita chips: Preheat oven to 180°C (350°F). Cut pita bread into triangles. Toss with olive oil, za’atar, and salt.
- Bake: Arrange pita on a baking sheet and bake for 10–12 minutes, flipping once, until golden and crisp. Sprinkle feta crumbles over the warm chips right out of the oven.
- Serve: Top with pickled zucchini slices or serve on the side as a fresh, tangy topping.
Notes
- For best flavor, prepare the pickles a day in advance.
- Adjust the amount of chili flakes based on your heat preference.
