- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon fresh rosemary, finely chopped
- 1 cup Manchego cheese, grated
- 1/2 cup unsalted butter, softened
- 1/4 cup cold water
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, salt, baking powder, and chopped rosemary. Mix well.
- Add the grated Manchego cheese and softened butter to the dry ingredients. Use your hands or a pastry cutter to blend until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until the dough comes together. If the dough is too dry, add a little more water, one tablespoon at a time.
- Turn the dough out onto a lightly floured surface and roll it out to about 1/8 inch thick.
- Cut the dough into desired shapes using a cookie cutter or knife and place them on the prepared baking sheet.
- Brush the tops of the crackers with the beaten egg for a golden finish.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on a wire rack before serving.
Notes
- For a spicier kick, add 1/4 teaspoon of red pepper flakes to the dough.
- You can substitute the Manchego cheese with sharp cheddar or gouda for a different flavor profile.
