Ingredients

  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 cup Manchego cheese, grated
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cold water
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, salt, baking powder, and chopped rosemary. Mix well.
  3. Add the grated Manchego cheese and softened butter to the dry ingredients. Use your hands or a pastry cutter to blend until the mixture resembles coarse crumbs.
  4. Gradually add the cold water, mixing until the dough comes together. If the dough is too dry, add a little more water, one tablespoon at a time.
  5. Turn the dough out onto a lightly floured surface and roll it out to about 1/8 inch thick.
  6. Cut the dough into desired shapes using a cookie cutter or knife and place them on the prepared baking sheet.
  7. Brush the tops of the crackers with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on a wire rack before serving.

Notes

  • For a spicier kick, add 1/4 teaspoon of red pepper flakes to the dough.
  • You can substitute the Manchego cheese with sharp cheddar or gouda for a different flavor profile.
