  • 1 cup panko breadcrumbs
  • 1/2 cup grated Pecorino cheese
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 teaspoon garlic salt
  • 1 teaspoon onion flakes
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 ounces cremini mushrooms, finely diced
  • 1 small shallot, finely minced
  • 2 tablespoons avocado oil
  • 1/4 cup chopped fresh basil
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat your oven to 375°F.
  2. In a skillet over medium heat, warm the avocado oil. Add the minced shallot and diced mushrooms, sautéing until tender and any liquid has evaporated, about 6-8 minutes. Remove from heat and allow to cool slightly.
  3. In a large bowl, mix together the ground beef, ground turkey, panko breadcrumbs, Pecorino cheese, buttermilk, egg, garlic salt, onion flakes, thyme, sea salt, and black pepper until just blended.
  4. Fold in the cooled mushroom and shallot mixture along with the chopped basil, ensuring even distribution without overmixing.
  5. On a baking sheet lined with foil, form the meat mixture into a ring shape, leaving a hollow center, about 1 inch thick.
  6. Fill the center of the ring with crumbled feta cheese.
  7. Bake in the preheated oven for 50 minutes, or until the internal temperature reaches 165°F. Allow to rest for 10 minutes before slicing.
