Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons cold water
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 1 tablespoon miso paste
  • 1 teaspoon soy sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 3 large eggs
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Instructions

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. In a skillet over medium heat, add olive oil. Sauté the onion until translucent, about 5 minutes.
  5. Add garlic and mushrooms, cooking until the mushrooms are tender and any liquid has evaporated, about 8 minutes.
  6. Stir in miso paste, soy sauce, black pepper, and red pepper flakes, if using. Remove from heat and let cool slightly.
  7. Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork and bake for 10 minutes until lightly golden.
  8. In a mixing bowl, whisk together the eggs, heavy cream, Parmesan cheese, and thyme. Stir in the mushroom mixture.
  9. Pour the filling into the pre-baked tart shell.
  10. Bake for 30-35 minutes, or until the filling is set and the top is slightly golden. Let cool for 10 minutes before slicing.

Notes

  • For a vegetarian option, replace the Parmesan with a plant-based cheese.
  • Add spinach or kale to the mushroom mixture for added nutrition and flavor.
