- 1 medium onion, diced
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, peeled and sliced
- 8 cups chicken broth
- 2 cups water
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup mushrooms, sliced
- 2 cups baby spinach
- 1 pound cooked chicken, shredded
- 1 package wonton wrappers (about 12 ounces)
- 2 green onions, sliced (for garnish)
- Fresh cilantro (for garnish)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and sliced ginger, cooking for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and water, then add the soy sauce, sesame oil, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and add the sliced mushrooms. Simmer for about 10 minutes.
- Stir in the baby spinach and shredded chicken, cooking until the spinach wilts, about 2-3 minutes.
- While the soup is simmering, prepare the wontons according to package instructions. You can either boil or steam them.
- To serve, place a few wontons in a bowl, ladle the hot broth over them, and garnish with sliced green onions and fresh cilantro.
Notes
- For added flavor, consider adding a splash of rice vinegar or chili oil to the broth before serving.
- You can customize the soup by adding other vegetables like bok choy, carrots, or snow peas for extra nutrition and color.
