  • 8 cups chicken broth
  • 2 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mushrooms, sliced
  • 2 cups baby spinach
  • 1 pound cooked chicken, shredded
  • 1 package wonton wrappers (about 12 ounces)
  • 2 green onions, sliced (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and sliced ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Pour in the chicken broth and water, then add the soy sauce, sesame oil, salt, and black pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low and add the sliced mushrooms. Simmer for about 10 minutes.
  5. Stir in the baby spinach and shredded chicken, cooking until the spinach wilts, about 2-3 minutes.
  6. While the soup is simmering, prepare the wontons according to package instructions. You can either boil or steam them.
  7. To serve, place a few wontons in a bowl, ladle the hot broth over them, and garnish with sliced green onions and fresh cilantro.
