  • 4 cups beef broth
  • 2 cups water
  • 1 onion, chopped

  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 4 servings ramen noodles
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, combine the beef chuck roast, beef broth, water, chopped onion, minced garlic, guajillo chiles, ancho chiles, cumin, oregano, salt, and pepper.
  2. Bring the mixture to a boil, then reduce heat and simmer for about 2 hours, or until the beef is tender.
  3. Remove the beef from the pot and shred it using two forks.
  4. Strain the broth to remove the solids and return the liquid to the pot.
  5. Cook the ramen noodles according to package instructions and drain.
  6. To serve, place a portion of ramen noodles in a bowl, top with shredded beef, and ladle the rich broth over the top.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
