Instructions
- In a large pot, combine the beef chuck roast, beef broth, water, chopped onion, minced garlic, guajillo chiles, ancho chiles, cumin, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for about 2 hours, or until the beef is tender.
- Remove the beef from the pot and shred it using two forks.
- Strain the broth to remove the solids and return the liquid to the pot.
- Cook the ramen noodles according to package instructions and drain.
- To serve, place a portion of ramen noodles in a bowl, top with shredded beef, and ladle the rich broth over the top.
- Garnish with fresh cilantro and serve with lime wedges on the side.
