- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)
- Salt and pepper to taste
- 1 cup couscous
- 1 ¼ cups vegetable broth
- 1 tablespoon fresh parsley, chopped (for garnish)
- Zest of 1 lemon
Instructions
- In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the sliced mushrooms and sauté for about 5-7 minutes until they are tender and browned.
- Add the minced garlic, thyme, and rosemary to the skillet. Cook for an additional 1-2 minutes until the garlic is fragrant. Season with salt and pepper to taste. Remove from heat and set aside.
- In a separate saucepan, bring the vegetable broth to a boil. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until the couscous has absorbed the broth.
- Fluff the couscous with a fork and mix in the lemon zest.
- Serve the herb-infused couscous topped with the sautéed wild mushrooms and garnish with fresh parsley.

- For added flavor, consider adding a splash of white wine to the mushrooms while sautéing.
