- 1 cup almond flour
- 1/4 cup ground flaxseed
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 2 large eggs
- 1/4 cup water
- 1 can (3.75 ounces) sardines in olive oil, drained
- 1/2 cup pitted Kalamata olives
- 2 tablespoons capers, rinsed
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, ground flaxseed, baking powder, and salt. Mix well.
- In another bowl, whisk together olive oil, eggs, and water until smooth.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a little more almond flour.
- Transfer the dough to the prepared baking sheet and shape it into a flatbread, about 1/4 inch thick.
- Bake for 15-20 minutes or until the edges are golden brown. Remove from the oven and let it cool slightly.
- While the flatbread is baking, prepare the tapenade. In a food processor, combine sardines, Kalamata olives, capers, parsley, lemon juice, and garlic. Pulse until well blended but still chunky. Season with salt and pepper to taste.
- Spread the sardine and olive tapenade over the warm flatbread. Cut into slices and serve.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the tapenade.
- You can substitute the sardines with canned tuna or salmon for a different flavor profile.
