Ingredients

  • 1 cup almond flour
  • 1/4 cup ground flaxseed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 2 large eggs
  • 1/4 cup water
  • 1 can (3.75 ounces) sardines in olive oil, drained
  • 1/2 cup pitted Kalamata olives
  • 2 tablespoons capers, rinsed
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, ground flaxseed, baking powder, and salt. Mix well.
  3. In another bowl, whisk together olive oil, eggs, and water until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a little more almond flour.
  5. Transfer the dough to the prepared baking sheet and shape it into a flatbread, about 1/4 inch thick.
  6. Bake for 15-20 minutes or until the edges are golden brown. Remove from the oven and let it cool slightly.
  7. While the flatbread is baking, prepare the tapenade. In a food processor, combine sardines, Kalamata olives, capers, parsley, lemon juice, and garlic. Pulse until well blended but still chunky. Season with salt and pepper to taste.
  8. Spread the sardine and olive tapenade over the warm flatbread. Cut into slices and serve.

  • For a spicier kick, add a pinch of red pepper flakes to the tapenade.
