Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 1/4 teaspoon sea salt
  • 8 ounces semi-sweet chocolate, chopped
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, cocoa powder, powdered sugar, and salt.
  3. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  4. Stir in the egg yolk and cold water until the dough comes together.
  5. Press the dough into a 9-inch tart pan evenly across the bottom and up the sides.
  6. Prick the bottom with a fork and bake for 15-20 minutes or until set. Let cool.
  7. In a saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar dissolves.
  8. Increase the heat and cook without stirring until the mixture turns a deep amber color.
  9. Remove from heat and carefully whisk in the heavy cream and sea salt (it will bubble up).
  10. Add the chopped chocolate and vanilla extract, stirring until smooth.
  11. Pour the chocolate caramel filling into the cooled tart shell.
  12. Refrigerate for at least 2 hours to set before serving.

Notes

  • For a nutty flavor, add 1/2 cup of finely ground nuts to the crust mixture.
  • Drizzle extra salted caramel on top before serving for an added touch of sweetness.
