- 1 pound large shrimp, peeled and deveined
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup polenta (cornmeal)
- 4 cups water
- 1 teaspoon salt (for polenta)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)
- Lemon wedges (for serving)
Instructions
- In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 teaspoon of salt, then gradually whisk in the polenta. Reduce heat to low and cook, stirring frequently, for about 15-20 minutes until thickened. Remove from heat and stir in the Parmesan cheese. Pour the polenta into a greased 8×8-inch baking dish and spread evenly. Let it cool for at least 30 minutes until set.
- Once the polenta is set, preheat your oven to 425°F. Cut the polenta into cubes (about 1 inch) and place them on a baking sheet. Drizzle with olive oil and toss to coat. Bake for 20-25 minutes, turning halfway through, until golden and crispy.
- While the polenta is baking, season the shrimp with salt, black pepper, and garlic powder. In a large skillet, heat the butter over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat.
- Once the polenta cubes are crispy, remove them from the oven and serve them on plates topped with the sautéed shrimp. Garnish with chopped parsley and serve with lemon wedges on the side.
Notes
- For added flavor, consider marinating the shrimp in a mixture of lime juice, garlic, and a pinch of cayenne pepper for 30 minutes before cooking.
- Substitute the polenta with cooked quinoa or rice for a different texture and flavor profile.
