A delicious recipe for crispy salmon roe patties fried in beef tallow.
Ingredients

- 1 cup salmon roe
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup chopped fresh parsley
- 1 large egg
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup beef tallow (for frying)
Instructions
- In a mixing bowl, combine the salmon roe, breadcrumbs, chopped onion, parsley, egg, lemon juice, salt, and black pepper. Mix gently until all ingredients are well incorporated, being careful not to break the roe too much.
- Form the mixture into small patties, about 2 inches in diameter. You should have around 8 patties.
- Heat the beef tallow in a large skillet over medium heat until melted and hot.
- Carefully place the patties in the skillet, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess fat.
- Serve warm with lemon wedges or your favorite dipping sauce.
Notes
- For a spicier kick, add a teaspoon of hot sauce or a pinch of cayenne pepper to the mixture.
- Substitute the beef tallow with olive oil or coconut oil for a different flavor profile and cooking method.
