- 4 (6-ounce) salmon fillets
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 small head of radicchio, chopped
- 2 cloves garlic, minced
- 1 tablespoon capers, rinsed and drained
- 4 anchovy fillets, chopped
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy.
- Carefully flip the salmon fillets and transfer the skillet to the preheated oven. Bake for an additional 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is baking, prepare the radicchio and anchovy sauce. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped radicchio and sauté for about 3-4 minutes until it begins to wilt.
- Add the minced garlic, capers, and chopped anchovies to the pan. Cook for another 2-3 minutes, stirring frequently.
- Stir in the red wine vinegar and Dijon mustard, cooking for an additional minute until well combined. Remove from heat.
- Once the salmon is done, plate the fillets and top with the radicchio and anchovy sauce. Garnish with fresh parsley before serving.
Notes
- For a milder flavor, you can substitute the anchovies with a tablespoon of soy sauce or miso paste.
- Serve the salmon with a side of roasted potatoes or a simple green salad for a complete meal.
