Ingredients

  • 4 (6-ounce) salmon fillets
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 small head of radicchio, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon capers, rinsed and drained
  • 4 anchovy fillets, chopped
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy.
  3. Carefully flip the salmon fillets and transfer the skillet to the preheated oven. Bake for an additional 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
  4. While the salmon is baking, prepare the radicchio and anchovy sauce. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped radicchio and sauté for about 3-4 minutes until it begins to wilt.
  5. Add the minced garlic, capers, and chopped anchovies to the pan. Cook for another 2-3 minutes, stirring frequently.
  6. Stir in the red wine vinegar and Dijon mustard, cooking for an additional minute until well combined. Remove from heat.
  7. Once the salmon is done, plate the fillets and top with the radicchio and anchovy sauce. Garnish with fresh parsley before serving.

Notes

  • For a milder flavor, you can substitute the anchovies with a tablespoon of soy sauce or miso paste.
