Description

Lemon Garlic Salmon Pasta is a delightful dish that combines the flavors of salmon, garlic, and lemon with pasta for a delicious meal.


Ingredients

  • 8 ounces spaghetti or linguine
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 pound salmon fillet
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Season the salmon fillet with salt, black pepper, and red pepper flakes (if using). Place the salmon in the skillet and cook for about 4-5 minutes on each side, or until cooked through and flaky. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
  5. Reduce the heat to low and stir in the heavy cream, Parmesan cheese, lemon juice, and lemon zest. Mix well and let it simmer for 2-3 minutes.
  6. Flake the cooked salmon into bite-sized pieces and return it to the skillet. Add the cooked pasta and toss everything together, adding reserved pasta water as needed to reach desired consistency.
  7. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute heavy cream with Greek yogurt or a low-fat cream alternative.
  • Add spinach or arugula to the pasta for extra greens and flavor; stir them in just before serving until wilted.
