Lemon Garlic Salmon Pasta is a delightful dish that combines the flavors of salmon, garlic, and lemon with pasta for a delicious meal.

- 8 ounces spaghetti or linguine
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 pound salmon fillet
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Season the salmon fillet with salt, black pepper, and red pepper flakes (if using). Place the salmon in the skillet and cook for about 4-5 minutes on each side, or until cooked through and flaky. Remove the salmon from the skillet and set aside.
- In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Reduce the heat to low and stir in the heavy cream, Parmesan cheese, lemon juice, and lemon zest. Mix well and let it simmer for 2-3 minutes.
- Flake the cooked salmon into bite-sized pieces and return it to the skillet. Add the cooked pasta and toss everything together, adding reserved pasta water as needed to reach desired consistency.
- Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute heavy cream with Greek yogurt or a low-fat cream alternative.
- Add spinach or arugula to the pasta for extra greens and flavor; stir them in just before serving until wilted.
