- 8 ounces elbow macaroni
- 1 can (14.75 ounces) salmon, drained and flaked
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 cup celery, diced
- 1/2 cup red onion, diced
- 1/2 cup sweet pickle relish
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions; drain and let cool.
- In a large bowl, combine the mayonnaise, Dijon mustard, and lemon juice.
- Add the flaked salmon, diced celery, red onion, and sweet pickle relish to the bowl.
- Stir in the cooled macaroni and mix until well combined.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a healthier option, use Greek yogurt instead of mayonnaise.
- Feel free to add other vegetables like bell peppers or peas for extra crunch.
