- 1 can (14.75 oz) salmon, drained and flaked
- 1/3 cup breadcrumbs (panko or regular)
- 1 egg
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1/2 small onion, finely diced
- 1 garlic clove, minced
- 1/4 cup bell pepper, finely chopped (optional)
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 2 tbsp olive oil (for frying)
Instructions
- In a large bowl, combine salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, onion, garlic, bell pepper, lemon juice, salt, pepper, and paprika. Mix well.
- Shape the mixture into 8-10 patties or croquettes.
- Heat oil in a skillet over medium heat. Fry the croquettes for 3-4 minutes on each side, until golden brown and crispy.
- Drain on paper towels and serve with lemon wedges or tartar sauce.
Notes
- You can use fresh, cooked salmon instead of canned if desired.
- For a healthier option, bake the croquettes at 400°F (200°C) for 15-20 minutes.
