- 1 cup Arborio rice
- 4 cups whole milk
- 1 cup coconut milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon saffron threads
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup raisins (optional)
- Chopped pistachios or almonds for garnish (optional)
Instructions
- In a medium saucepan, combine the Arborio rice, whole milk, coconut milk, sugar, and salt. Stir well to combine.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent sticking.
- Once simmering, reduce the heat to low and add the saffron threads. Continue to cook, stirring occasionally, for about 25-30 minutes, or until the rice is tender and the mixture has thickened to a creamy consistency.
- Stir in the vanilla extract and ground cinnamon. If using, add the raisins and mix well.
- Remove the saucepan from heat and let the pudding cool slightly. It will thicken further as it cools.
- Serve warm or chilled, garnished with chopped pistachios or almonds if desired.
Notes
- For a richer flavor, substitute half of the whole milk with heavy cream.
- Experiment with different spices like cardamom or nutmeg for a unique twist on the traditional flavor.
