Ingredients

  • 4 cups whole milk
  • 1 cup coconut milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon saffron threads
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup raisins (optional)
  • Chopped pistachios or almonds for garnish (optional)

Instructions

  1. In a medium saucepan, combine the Arborio rice, whole milk, coconut milk, sugar, and salt. Stir well to combine.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent sticking.
  3. Once simmering, reduce the heat to low and add the saffron threads. Continue to cook, stirring occasionally, for about 25-30 minutes, or until the rice is tender and the mixture has thickened to a creamy consistency.
  4. Stir in the vanilla extract and ground cinnamon. If using, add the raisins and mix well.
  5. Remove the saucepan from heat and let the pudding cool slightly. It will thicken further as it cools.
  6. Serve warm or chilled, garnished with chopped pistachios or almonds if desired.

Notes

  • For a richer flavor, substitute half of the whole milk with heavy cream.
