  • 1 can (13.5 ounces) coconut milk
  • 1 ½ cups water
  • 1 teaspoon saffron threads
  • 1 tablespoon olive oil
  • 2 medium shallots, thinly sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a small bowl, combine the saffron threads with 2 tablespoons of warm water and let it steep for about 10 minutes.
  3. In a medium saucepan, combine the rinsed rice, coconut milk, water, saffron mixture, salt, and black pepper. Stir gently.
