- Fresh cilantro, for garnish (optional)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a small bowl, combine the saffron threads with 2 tablespoons of warm water and let it steep for about 10 minutes.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, saffron mixture, salt, and black pepper. Stir gently.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes.
- While the rice is cooking, heat the olive oil in a small skillet over medium heat and cook the sliced shallots until golden brown and crispy.
- Once the rice is done, let it sit covered for an additional 5 minutes, then fluff with a fork.
- Serve the saffron coconut rice warm, topped with crispy shallots and garnished with fresh cilantro if desired.
