Ingredients

  • 1/4 teaspoon saffron threads
  • 1 medium banana, frozen
  • 1/4 cup Greek yogurt
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup crushed ice (optional)

Instructions

  1. In a small bowl, combine the almond milk and saffron threads. Let it steep for about 10 minutes to allow the saffron to infuse its flavor and color into the milk.
  2. In a blender, add the steeped almond milk, frozen banana, Greek yogurt, honey or maple syrup, ground cinnamon, vanilla extract, and crushed ice if using.
  3. Blend on high speed until smooth and creamy, about 30-60 seconds.
  4. Taste and adjust sweetness if necessary, adding more honey or syrup if desired.
  5. Pour the smoothie into glasses and serve immediately, garnished with a sprinkle of cinnamon or a few saffron strands if desired.
