Ingredients

- 2 cups unsweetened almond milk
- 1/4 teaspoon saffron threads
- 1 medium banana, frozen
- 1/4 cup Greek yogurt
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 cup crushed ice (optional)
Instructions
- In a small bowl, combine the almond milk and saffron threads. Let it steep for about 10 minutes to allow the saffron to infuse its flavor and color into the milk.
- In a blender, add the steeped almond milk, frozen banana, Greek yogurt, honey or maple syrup, ground cinnamon, vanilla extract, and crushed ice if using.
- Blend on high speed until smooth and creamy, about 30-60 seconds.
- Taste and adjust sweetness if necessary, adding more honey or syrup if desired.
- Pour the smoothie into glasses and serve immediately, garnished with a sprinkle of cinnamon or a few saffron strands if desired.
Notes
- For a nut-free version, substitute almond milk with oat milk or coconut milk.
- Add a handful of spinach or kale for an extra nutrient boost without altering the flavor significantly.
