Description

Sadza neNyama is a traditional Zimbabwean dish consisting of maize meal served with a flavorful beef stew.


Ingredients

  • 2 cups maize meal (cornmeal)
  • 4 cups water
  • 1 teaspoon salt
  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 medium tomatoes, chopped
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth or water
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a large pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt.
  2. Gradually stir in the maize meal, mixing continuously to prevent lumps.
  3. Reduce heat to low and cook for about 10-15 minutes, stirring frequently until the mixture thickens and pulls away from the sides of the pot.
  4. Remove from heat and cover to keep warm.
  5. In a separate large skillet, heat the vegetable oil over medium-high heat.
  6. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  7. In the same skillet, add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  8. Add the bell pepper and cook for another 2 minutes.
  9. Stir in the chopped tomatoes, paprika, cumin, salt, and black pepper.
  10. Return the browned beef to the skillet and pour in the beef broth or water.
  11. Bring to a simmer, cover, and cook for 30-40 minutes, or until the beef is tender.
  12. If desired, stir in chopped fresh parsley before serving.
  13. To serve, scoop a portion of sadza onto a plate and top with the beef stew.

Notes

  • For a spicier stew, add chopped jalapeños or a pinch of cayenne pepper.
  • You can substitute the beef with chicken or a plant-based protein for a different flavor profile.
