  • 1 cup rye flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup granulated sugar
  • 1/2 cup cold buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F.
  2. In a 10-inch cast-iron skillet, melt the butter over medium heat.
  3. Add the brown sugar, cinnamon, and salt, stirring until the mixture is bubbly and smooth.
  4. Arrange the apple quarters in the skillet, cut side down, and cook for about 10 minutes until they begin to soften.
  5. In a mixing bowl, whisk together the rye flour, baking powder, baking soda, and granulated sugar.
  6. In another bowl, combine the buttermilk, egg, and vanilla extract.
  7. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  8. Once the apples are ready, pour the batter evenly over the apples in the skillet.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  10. Remove the skillet from the oven and let it cool for about 5 minutes.
  11. Carefully invert the tart onto a serving plate.
  12. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
