- 1 cup fresh or frozen cranberries
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon lemon juice
- 1/2 cup crushed graham crackers
- 2 tablespoons unsalted butter, melted
- Fresh cranberries and mint leaves for garnish (optional)
Instructions
- In a saucepan over medium heat, combine the cranberries and granulated sugar. Cook until the cranberries burst and the mixture thickens, about 10 minutes. Remove from heat and stir in the vanilla extract. Let it cool completely.
- In a mixing bowl, beat the heavy whipping cream until stiff peaks form. In another bowl, beat the softened cream cheese, powdered sugar, and lemon juice until smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture until well combined. Then, fold in the cooled cranberry mixture until fully incorporated.
- In a separate bowl, mix the crushed graham crackers with melted butter until crumbly. Press the mixture into the bottom of small cups or a muffin tin to form a crust.
- Spoon the cranberry mousse over the crusts in each cup or muffin tin. Smooth the tops with a spatula.
- Refrigerate for at least 2 hours or until set. Garnish with fresh cranberries and mint leaves before serving.
