Ingredients

- 2 cups shredded rotisserie chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (4 oz) diced green chilies
- ½ cup sour cream
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 flour tortillas
- 1 (10 oz) can red enchilada sauce
- Additional shredded cheese (for topping)
- Fresh cilantro (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, cheeses, green chilies, sour cream, cumin, salt, and pepper.
- Fill each tortilla with 2–3 tablespoons of the chicken mixture and roll tightly.
- Place seam-side down in a greased 9×13-inch baking dish.
- Pour enchilada sauce evenly over the top and sprinkle with additional cheese.
- Bake for 20–25 minutes, or until bubbly and golden.
- Garnish with cilantro before serving if desired.
Notes
- Feel free to adjust the amount of cheese based on your preference.
- For a spicier kick, add jalapeños to the filling.
