Delicious and easy-to-make Rotisserie Chicken Enchiladas that everyone will love!


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (4 oz) diced green chilies
  • ½ cup sour cream
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 flour tortillas
  • 1 (10 oz) can red enchilada sauce
  • Additional shredded cheese (for topping)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix chicken, cheeses, green chilies, sour cream, cumin, salt, and pepper.
  3. Fill each tortilla with 2–3 tablespoons of the chicken mixture and roll tightly.
  4. Place seam-side down in a greased 9×13-inch baking dish.
  5. Pour enchilada sauce evenly over the top and sprinkle with additional cheese.
  6. Bake for 20–25 minutes, or until bubbly and golden.
  7. Garnish with cilantro before serving if desired.

Notes

  • Feel free to adjust the amount of cheese based on your preference.
  • For a spicier kick, add jalapeños to the filling.
