Description

A luxurious frozen dessert combining the floral notes of rosewater with the tartness of raspberries.


Ingredients

  • 2 cups fresh raspberries
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/2 cup whole milk
  • 2 tablespoons rosewater
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions

  1. In a blender, puree the raspberries until smooth and strain to remove seeds.
  2. In a saucepan, combine the milk, sugar, and rosewater over medium heat until sugar dissolves.
  3. In a bowl, whisk the egg yolks and gradually add the warm milk mixture, stirring constantly.
  4. Return the mixture to the saucepan and cook until thickened, then remove from heat.
  5. Let the mixture cool, then fold in the raspberry puree and vanilla extract.
  6. In a separate bowl, whip the heavy cream until soft peaks form, then gently fold into the raspberry mixture.
  7. Pour the mixture into a loaf pan and freeze for at least 6 hours or until firm.
  8. To serve, slice and garnish with fresh raspberries and a drizzle of rosewater.

Notes

  • For a more intense flavor, increase the amount of rosewater.
  • Can be made a day in advance for convenience.
  • Serve with additional fresh raspberries for decoration.
