Ingredients

  • 3 to 4-pound whole duck
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 4 cloves garlic, finely chopped
  • 2 tablespoons fresh rosemary, finely minced
  • 1 lemon, cut into wedges
  • 1 onion, cut into quarters

Instructions

  1. Preheat your oven to 375°F.
  2. Rinse the duck under cold running water and dry it thoroughly with paper towels.
  3. Remove any excess fat from the cavity and neck area.
  4. In a mixing bowl, combine olive oil, sea salt, black pepper, chopped garlic, and minced rosemary to create a rub.
  5. Apply the rub generously all over the duck, including the inside of the cavity.
  6. Fill the duck’s cavity with lemon wedges and onion quarters.
  7. Place the duck, breast-side up, on a roasting rack inside a roasting pan.
  8. Roast the duck for approximately 1 hour and 30 minutes, basting every half hour.
  9. Check that the internal temperature reaches 165°F in the thickest part of the thigh.
  10. Let the duck rest for about 15 minutes before carving.

  • For extra crispy skin, air-dry the duck in the refrigerator uncovered for several hours or overnight before cooking.
  • Experiment with adding fresh thyme or sage to the herb mixture for a flavor variation.
