- 3 to 4-pound whole duck
- 2 tablespoons extra virgin olive oil
- 1 tablespoon sea salt
- 1 teaspoon freshly ground black pepper
- 4 cloves garlic, finely chopped
- 2 tablespoons fresh rosemary, finely minced
- 1 lemon, cut into wedges
- 1 onion, cut into quarters
Instructions
- Preheat your oven to 375°F.
- Rinse the duck under cold running water and dry it thoroughly with paper towels.
- Remove any excess fat from the cavity and neck area.
- In a mixing bowl, combine olive oil, sea salt, black pepper, chopped garlic, and minced rosemary to create a rub.
- Apply the rub generously all over the duck, including the inside of the cavity.
- Fill the duck’s cavity with lemon wedges and onion quarters.
- Place the duck, breast-side up, on a roasting rack inside a roasting pan.
- Roast the duck for approximately 1 hour and 30 minutes, basting every half hour.
- Check that the internal temperature reaches 165°F in the thickest part of the thigh.
- Let the duck rest for about 15 minutes before carving.
Notes
- For extra crispy skin, air-dry the duck in the refrigerator uncovered for several hours or overnight before cooking.
- Experiment with adding fresh thyme or sage to the herb mixture for a flavor variation.
- Pair with roasted seasonal vegetables or creamy mashed potatoes for a complete meal.
